Wondering how to start cooking with Sea Vegetables, or looking for some new techniques to add these tasty, nutritious, and foraging friendly foods to your daily fare? Join Allison Poklemba and her cousin/tastetester Ben in their magical garden kitchen for this virtual class full of cooking demos and recipes with something for even the pickiest eaters in your family. We’ll prepare package-free “Nori chips,” make Wakame fettuccine, fennel lemon Sea Oak pickles, savory seaweed Gomassio, Ocean Garden Sprinkle, Sea-crusted Sushi Rice Balls, and — to top off your meal — Seaweed “Candy” Bars for dessert!

This class was recorded as live webinar broadcast on 8/23/2020 in Freshwater, CA. This webinar is the second in a series. The previous class, Sea Vegetables of the PNW, focuses on identification, legal and ethical foraging, and processing your seaweed post-harvest. Part 1 is not required, but highly recommended before “Cooking with Sea Vegetables” if you are planning to forage for your own seaweeds or are interested in seeing where/how they grow.

About your teacher:

Allison Poklemba is a botanist, environmental educator, co-owner of Backcountry Press and Dandelion Herbal Center, and (most importantly!) a seaweed enthusiast. She has been teaching about the joys of foraging for and cooking with sea vegetables for 20 years. Each summer she guides classes through the tide pools of Northern California on seaweed harvest adventures where they prepare a sea vegetable feast with their finds to enjoy together afterwards, but alas, the pandemic is requiring a different approach this summer: a virtual class and materials to guide you on your own adventure!

    I loved the fun that came through! It was great to see the particular sea weed, and hear your description of them at the same time. It helped me to see the transition from dried to soft in the boiling water – wow! Demos were clear and useful, and I’m looking forward to making some of the dishes. Ben was charming! The only drawback, and I know you were dealing with it, was that you had to keep moving the screen/camera. Maybe have it a bit farther away, so you can get more in the field of view? Amazing job for your first on-line cooking class!

    This cooking class was awesome and gave me the confidence I needed to start cooking with seaweed (I am even eating my own wakame-noodle stir fry right now!). It was very fun to watch Allison cooking up a storm even while viewing from my couch at home. Since I live nearby, I was able to pick up some of her creations and can personally vouch for their utter deliciousness! It was excellent to have another crewmember taste test, and I think it would be even better if he was involved more—Ben, can you use more flowery language to describe the tastes and maybe throw in a seaweed joke or two? Like: what did the mermaid wear to the mathematician’s house party?

The Smith River is the most undeveloped and protec The Smith River is the most undeveloped and protected river remaining in California, and the largest completely undammed river from source to sea in the state.

It drains the high elevation flanks of the western Siskiyou Mountains, who’s thin, rocky soils shed water from winter storms faster than any other watershed in the Klamath Mountains.

This River commonly rises insanely fast—from 5,000 to 80,000 cfs within 24 hours.

It’s an absolute joy to watch this wild river flowing swift and clear, full of welcome winter rains.

We were turned on to the concept of Slow TV by @b_funke.jpg and @gabriellegopinath. We love watching the rivers flow, the mountains catching morning light, the fog slowly settling between ridges. Apparently when you record this it’s called Slow TV! Would a YouTube channel featuring such *shows* from the Klamath Mountains interest you?

HINT: Tie the @lindt chocolate to a stick with a blade of grass and dangle it in front of your tot as you hike along. Allow them to grab it only when the laughter subsides. This should buy you an extra mile or two.
